Description

Cofield Prosecco is a Gold Medal-winning sparkling wine from Victoria’s Alpine Valley, crafted to be the perfect ‘anytime’ drop. It shines a clear pale straw in the glass and opens with vibrant aromas of apple cider, spiced pear and citrus blossom. Crisp and dry on the palate, it delivers flavours of lemon, baked apple and nashi pear, complemented by a soft, foamy mousse and light, delicate bubbles. A fresh zing and pitch-perfect acidity carry the wine through to a long, clean finish. While subtly sweet with hints of pear, it is deliberately made in a drier style than many other Proseccos.

Grown in the cooler climate of Mount Buffalo, the grapes are picked early to capture maximum freshness and acidity. The wine is crafted using the Charmat method—fermented in a pressurised tank to enhance its fruity aromatics—and spends a short time on lees for added richness and mouthfeel. Best enjoyed young for its spritzy, vibrant character, it can also cellar for 3–4 years. With an alcohol volume of 11.3%, this versatile Prosecco is a natural match for grazing platters, creamy cheeses and cured meats, and pairs beautifully before, during or after a meal.

    We source our Prosecco grapes from Mount Buffalo as the cooler climate is ideal growing conditions for this fruit. The grapes are picked early to maintain maximum freshness and acidity. The grapes are crushed, pressed and fermented in tank.

    It is left on lees for a short period to add richness and mouthfeel. Using the ’Charmat’ method, it is fermented in a pressurised tank for a short period of time to bring out the fruity aromas.

    Whilst sill having a subtle pear sweetness, our Prosecco is made deliberately dryer with less sugar than many other options available.
