Description

This refined sparkling wine, crafted from 72% Pinot Noir and 28% Chardonnay using the Traditional Method, showcases elegance and complexity. Pale lemon-tinged in colour, it opens with vibrant aromas of strawberry, lemon zest, and green apple, complemented by subtle hints of brioche and almond developed through extended lees aging. The nose is inviting and fresh, setting the stage for a palate that is both expressive and balanced.

On the palate, the wine displays a creamy texture with crisp acidity, mineral undertones, and red fruit flavours that persist through a long, refined finish. The grapes were carefully whole-bunch pressed to preserve delicacy and prevent harsh phenolics, and the base wines were vinified separately before blending and secondary fermentation in bottle. Ideal for pairing with fresh oysters, lightly seared scallops, or a goat cheese tart, this sparkling wine combines finesse, structure, and subtle richness for a truly memorable experience.

  • Winemaking

The grapes were gently whole-bunch pressed to avoid extracting colour from the red Pinot Noir grapes and to prevent the release of coarse phenolics that could compromise the delicacy of the base wine. Pinot Noir (72%) and Chardonnay (28%) were vinified separately and blended after primary fermentation. Crafted using the Traditional Method, the wine underwent secondary fermentation in bottle and was aged on lees for several years, enhancing its creaminess and complexity.
