Description

Crafted from the classic Champagne varieties of Chardonnay (85%) and Pinot Noir (15%), this sparkling wine delivers balance, elegance and subtle complexity. It displays a clear, white-gold hue and opens with fresh, lifted aromas of lemon zest that gently evolve into richer strawberry notes. The palate is finely structured, with spicy citrus fruit at the forefront, followed by delicate strawberry and musk through the mid-palate. Hints of yeast and baking spice linger on the finish, adding depth and interest while maintaining a crisp, dry style with a touch more sweetness than a vintage sparkling.

The Chardonnay is sourced from the neighbouring All Saints Vineyard, while the Pinot Noir comes from the cool Alpine Valleys. Both varieties are picked early to retain natural acidity, essential for crafting high-quality sparkling wine. After primary fermentation in stainless steel, the Charmat method is used for secondary fermentation and bottling, enhancing freshness and effervescence. Best enjoyed now for its harmony and vibrancy, this wine is a perfect aperitif—especially alongside smoked salmon or assorted canapés—and sits at a delicate 10.5% alcohol.

    The Chardonnay is sourced from our neighbouring All Saints Vineyard, whilst the Pinot Noir is selected from the Alpine Valleys. Both parcels are picked early to ensure the acidity is retained, which is critical to the style. When the Pinot Noir is pressed, we use the juice from the second pressing to get a slightly deeper colour. Primary fermentation took place in stainless steel tanks before Charmat Method is used for second fermentation and bottling. It is 85% Chardonnay and 15% Pinot Noir, which gives a nice creaminess. Whilst slightly sweeter than our vintage sparkling, it is still a dry and crisp style.

On the palate, it is finely balanced, with bright citrus upfront, evolving into richer musk and strawberry characters mid-palate, and finishing with hints of yeast and baking spice that add complexity and depth.
