Description

Grown in the cool, high-altitude climate of Whitfield in the King Valley, this Riesling benefits from ideal conditions that enhance its classic crispness and aromatic intensity. The grapes are harvested at night from a single vineyard to preserve freshness, then gently pressed to extract delicate free-run juice. The wine opens with a vibrant and complex bouquet of lime, roses, white flowers, coriander seed, and apricot, reflecting both the variety and the unique terroir of the region.

An unconventional fermentation strategy adds further depth and nuance to the wine. Initially fermented with Hanseniaspora vinae yeast—a naturally occurring vineyard yeast—before completing fermentation with traditional Saccharomyces yeast, this approach enhances floral complexity while maintaining the characteristic lime freshness. On the palate, the wine is subtly textured yet refined, with crisp, sharp dryness and a distinct earthy character, creating a harmonious and expressive Riesling that is both vibrant and elegant.

    The grapes were harvested at night from a single vineyard in the high altitude of Whitfield, King Valley. After destemming the grapes are gently pressed to obtain the delicate free-run juice which is then fermented in stainless steel tank. The must was inoculated with a “Hanseniaspora vinae” yeast, this is a different genus of yeast than wines are usually fermented with, however it is often found naturally in the vineyard. Due to this yeast being susceptible to alcohol, the ferment was completed with our usual aromatic saccharomyces yeast towards the end of the process. This unconventional fermentation strategy was implemented to increase the complexity of aromas produced from our Riesling grapes. A more diverse array of aromas are present, particularly florals, to compliment our usual burst of lime from this variety.
