Tirage is when sugar and yeast are added to the already fermented base wine to cause a second fermentation in the bottle. This is what puts the sparkle in Cofield's Sparkling Wines.
At Cofield Wines, Tirage numbers are included in the wine name by use of T to indicate Tirage and Roman Numerals to indicate the Tirage Number. This indicates how many times that we have made a specific type of sparkling wine.
Cofield Wines Sparkling Shiraz has been produced 17 times now, hence the name T XVII.
Cofield Wines Sparkling Pinot Noir Chardonnay has been produced 14 times, so it is named T XIV.
Cofield Wines Sparkling Kristalee has been produced 7 times and is named..... you guessed it T VII.
