The Rutherglen Winery Walkabout is just around the corner (Queens Birthday weekend June 7 & 8 2008) and as always, there is heaps happening in Rutherglen and especially at Cofield Wines.

Cofield's are heralding the festivities with our traditional 'Sparkling Burgundy Breakfasts' on Saturday and Sunday. Kick start your day with a three course brekky, with our Sparkling Shiraz, of course and other Cofield gems. The breakfasts are always a popular way to start the Walkabout festivities. New direction for drinkmoor

It is with mixed emotions that the Cofield Family have decided to close the cellar door of drinkmoor Wines, with operations ceasing on the 30th June 2008.

The closure of this innovative concept winery established by Max Cofield in 2002, has been brought about after a strategic review of the company?s business operations and resources. The decision was made to realign the future growth of Cofield Wines with its recently acquired ?Netherby? vineyard in Rutherglen. Damien Cofield, Director and Senior Winemaker of Cofield Wines stated ?The ?Netherby? vineyard will provide Cofield Wines with the opportunity to provide an enhanced range of varietal wines that are highly suited to the Rutherglen region. It?s a new and exciting chapter in our company?s development.? Subsequent future projects being pursued by Damien and Melanie Cofield include the implementation of a state-of-the-art water saving irrigation system and the expansion of the vineyard. The drinkmoor property will be fitted out with a new Sparkling Line and the storage facility has already been fitted out with a brand new cool room (part of Stage 1 of the FPRAP grant), ready for the envisaged increase in sparkling production. You may remember that Cofield Wines were the recipients of a Federal Grant in 2007 for the development of a Rutherglen Sparkling Wine Tourism Project, which is now being developed at the drinkmoor facility.

?The decision to focus our resources on new projects and a new direction has not been an easy one?, says Damien Cofield, Director and Senior Winemaker of Cofield Wines, ?We are excited about our Sparkling wine development, new vineyard projects and a few other upcoming projects in the pipeline.? The cellar door at drinkmoor will remain closed (effective as of 28th March 2008) until this year?s Rutherglen Winery Walkabout, when it will reopen for its last hurrah.

Cofield Wines remains strongly committed to the ongoing growth and development of Rutherglen?s wine and tourism industry, and views the closure of its drinkmoor wines cellar door as a catalyst for a range of new and exciting future developments.

Vintage is in full swing

Vintage has kicked off at Cofield Wines and is in full swing.

The first grapes to come in were some of our whites, including Semillon, Chardonnay and some of our Chenin blanc. Other whites yet to come in are Marsanne, Viognier and Sauvignon Blanc.

Pinot Noir and Chardonnay from Tumbarumba have also arrived to make our fabulous Sparkling Pinot Noir Chardonnay.

Sangiovese was the first of our red wines to ripen and it was picked this week. We now await a plethora of red varieties to ripen and be picked ~ Shiraz, Cabernet Sauvignon, Merlot, Malbec, Durif, etc etc.

So the winery will be a hive of activity for the next few weeks with grapes arriving, crushing, pressing and ferments happening. Feel free to call in and say hi and see what's happening at the winery. We would love to see you.

New Release Marsanne

The Rhone Ranger, seen in recent times at the Winemakers of Rutherglen, Young Bloods & Bloody Legends Festival, has struck at Cofield Wines with the release of the 2007 Cofield Marsanne.

The popularity of Rhone varieties has increased in recent times, as wine drinkers experiment more and expand their wine repertoire to include wine styles that once were considered unusual. The Rhone Ranger has been striking at several Rutherglen wineries in recent times wine several wineries in the region now producing Marsanne or other Rhone varieties.

?Rutherglen Shiraz has always been a popular wine over the years and we are now seeing a real increase in demand for other Rhone varietals, such as Marsanne and Viognier. We have such belief in the longevity of popularity of these wines that we will be increasing our third vineyard plantings with both Marsanne and Viognier." said Damien Cofield, Cofield Wines Senior Winemaker and General Manager.

Dave Whyte, Winemaker commented, ?We believe our 2007 Marsanne is a good example of a fresh, fruit-driven style. We are aiming to make a wine with nice flavours of honey dew and melon; a nice fresh medium bodied dry white that showcases the natural fruit flavours of the variety.?

The 2007 Marsanne is pale straw in colour and has aromas of honeydew and melon with hints of pear and lemon blossom. The palate reflects the nose with honeydew, melon and pear flavours and has a creamy mouth-feel with balanced acidity.

January Wine of the Month

Cofield Wines Sauvignon Blanc Semillon is a fresh and crisp making it the perfect summer wine.

APPEARANCE Pale straw with green tinges.

AROMA Passionfruit and citrus with pungent grassy characters.

PALATE Up front citrus followed by asparagus and passionfruit and balanced with a creamy mouth-feel and crisp finish.

SERVICE AND CELLARING Served best at 10-12ºC. Enjoy now or cellar for up to 3 years.

WINEMAKING The two separate parcels of Sauvignon Blanc were chilled before being given 8 hours skin contact prior to pressing. This allows the flavours from the skins to be optimised. Then 25% of the Sauvignon Blanc juice was fermented in 1-2yr old French barrels and lees stirred for three months promoting a complex and generous mouth-feel.

The Semillon did not receive any skin contact and was de-stemmed to the press. Clean fermentation occurred in tanks before 1/3 of the wine was battonaged in 1-2yr old barrels with the other 2/3 going into stainless steel before blending with Sauvignon Blanc.

NORTH EAST BUSH FIRES

The Rutherglen tourism community shares the grief and anguish for the fire-fighters and communities directly involved and affected by the bush fires in both Victoria's High Country and the Gippsland region.

Our primary concern is obviously for the safety of visitors and residents of these regions and the protection of assets. It is with this in mind that we wish to inform visitors that Rutherglen and the surrounding villages (Beechworth, Yackandandah, Chiltern, Corowa etc.) are not in any direct or immediate danger from the fires.

The current fire sites are in heavily forested areas well away from the Rutherglen region, and we are not expecting this situation to change. The smoke haze from the previous week has largely been dispersed due to the strong northerlies, which has had the effect of bringing the attention of the fires directly into focus for Melbournians.

We would therefore like to simply inform visitors to our web site and potential visitors to Rutherglen that it's business as usual in the region, and we look forward to sharing the fruits of our labour and some authentic country hospitality with you soon.

DECEMBER FEATURE WINE

Our feature wine this month is 2005 Chenin Blanc.

Chenin Blanc is from the Loire Valley in France and can produce dry, sparkling and sweet style wines. Cofield Chenin Blanc is made in a semi-sweet style and is a fabulous summer wine. It is fresh and fruity and a glass of well chilled Chenin is so refreshing on those hot summer days.

APPEARANCE Bright pale straw.

AROMA Sweet apples, pears and a hint of citrus.

PALATE Pears, apples and tropical fruit salad . Ripe and sweet with a balanced acidity for a clean finish.

SERVICE AND CELLARING Served best at 8-10ºC. Team with leafy Thai inspired seafood and green leaf salad. Best before 2008.

Winemaking The juice underwent a cold fermentation of less than 10°C for seven days. This slow cold ferment also ensures the aromatics and acid structure remain intact and in balance. As the wine slowly ferments the residual sugar of the wine is monitored to ensure the flavour profiles we are looking for are achieved at the desired sweetness.

At the optimum combination of flavour and sweetness the wine is then centrifuged to spin off the solid yeast cells and the ferment stopped exactly where we believe the optimum balance is between sweetness, aromatics, acid structure and flavours.

The wine was then bottled in July under screw-cap, to ensure each bottle you open is at its optimum for your enjoyment.

SPRING FEVER

To celebrate Spring Racing Season, our feature wine this month is our fabulous T XIII Sparkling Pinot Noir Chardonnay.

The T in T XIII stands for Tirage. Using Methode Champenoise, base wines undergo a process called tirage, where sugar and yeast are added to the already fermented base wine to cause a second fermentation in the bottle. This is what puts the sparkle in Cofield's Sparkling Wines.

At Cofield Wines, tirage numbers are included in the wine name. This indicates how many times that wine has been made. So, Cofield Wines Sparkling Pinot Noir Chardonnay has been produced 13times now, hence the name T-XIII!

This non-vintage sparkling is a fine example of Cofield Wines expertise at producing premium bubbles. It is a blend of 80% Pinot Noir and 20% Chardonnay from two marvellous sparkling wine vintages.

A small amount of vintage Cofield Chardonnay, mixed with the dosage, was added for complexity

Appearance: Pale straw with a delicate bead and dense mousse

Aroma: Wild flower perfumes, lemon biscotti and strawberry-patch notes

Palate: Lemon/lime, stone fruits, strawberries & cream and almond meal complexities are balanced by a crisp acidity and an elegant mouthfeel. Delicate yet long with a fine persistent bead

AROMA White peaches and tropical fruits with a hint of citrus

MAGIC MERLOT

Our feature wine this month is our 2003 Merlot.

Hand-picked from our Wahgunyah Viticulture block, this low yielding Merlot (2.5tonnes per acre) was then put through the crusher and transferred to fermentation tanks for 9 days to slowly ferment with frequent pumping over of the juice to encourage flavour colour development.

Nearing the end of fermentation the juice was pressed off its skins using a pneumatic bag press and aged in French and American oak barrels for 20 months before being fined, filtered and bottled.

APPEARANCE Deep red with purple/violet edges

AROMA Perfumes of violets, mulberries, blackberries and tobacco leaf

PALATE Blackberry and raspberry meld together with toasty vanillin American oak

SERVICE AND CELLARING Served best at 13-15ºC. Whilst fantastic right now the wine will reward cellaring for a further 6-8 years.

BEST WINERY ON THE BORDER

How excited are we...Cofield Wines has been voted the Best Winery in the Albury/Wodonga and Surrounding District.

Radio station 104.9 Star FM has been running a Best of the Border competition. The competition has 20 categories in total, with a different category being voted upon each day. So each day the category is announced at 6.00am and listeners vote by texting Best and the name of the business they believe is the best of the category for that day. Voting closes at 2.00pm on the same day and the winner is announced at 8.30am the following day.

The category on Wednesday 3rd August 2006 was Best Winery. A number of wineries were nominated from a wide area, including wineries from Myrtleford, the King Valley, Beechworth and Rutherglen. After the votes were tallied Cofield Wines was announced as the Best Winery on the Border.

So thank you to Star FM and everyone who voted for us. We are a small family owned winery and we really want our customers to feel like they are members of our extended family of wine lovers. To be voted the Best Winery on The Border reinforces that you do feel this way. Thank you.

Q IS FOR QUARTZ VEIN

Our Quartz Vein wines are the pinnacle of Max and Damien's dedicated winemaking, as well as reflecting Andrew's dedication to the vines.

The Quartz Vein Wines are single vineyard wines and are only produced when the vintage conditions produce fruit with specific characteristics. These characteristics allow Damien to create a wine that showcases the power, silky roundness and full flavour that the Rutherglen Region can produce. The 2001 Quartz Vein Shiraz is an excellent example.

APPEARANCE Opaque and deep red with plum edges

AROMA Ripe red fruits, black olives and cloves

PALATE Stewed plums with hints of black olives and spice balanced firm tannins and vanillan oak.

SERVICE AND CELLARING Served best at 13-15ºC. Decanting will aerate and enhance the fruit characters of this powerful Shiraz. Cellar for 7-10 years.

WHAT IS LHM???

LHM is short for Late Harvest Muscadelle and the recently released 2005 LHM is our feature wine for July.

A BABY GIRL FOR MEL & DAMIEN

On the first day of Winter, Thursday 1st June 2006, we welcomed Mel and Damien Cofield's third child into the world. Sarah Louise is a sister for Mitchell and Ava and is a beautiful healthy baby.

Sarah wasn't a small baby, weighing in at 9lb 1oz (4.12kg) and being 50.5cm long and Melanie says that Sarah takes after her father, as she arrived a week late.

Sarah's personality is already shining through and believe it or not, she is smiling already at only 3 weeks old.

MALBEC MADNESS IN MAY

Our feature wine for the month of May is one of our favourite varieties - Malbec.

Deep red with violet nuances this wonderful variety exudes floral perfumes & anisette notes with mixed berries and mocha oak. Elegance is the key word, yet it displays great length & intense flavours of wild blackberries, subtle mint and cinnamon spiced mocha oak.

Served best at 13-15ºC. Malbec is a quiet little sleeper when it comes to cellaring the 01 vintage will benefit from at least 10 years in a dark corner.

Malbec is one of the five famous bordelaise varietals of France, because of this grapes heritage we adopted some French approaches to winemaking.

Firstly, the hand-picked grapes were put through the crusher and left on skins in open fermenters for two days to begin fermenting using naturally occurring wild yeasts before they were seeded with the Grand Cuvee red yeast strain. Before and after seeding hand plunging of the cap occurred three-four times a day to help generate colour and flavour intensity. The open ferment continued for five more days before the juice was pressed off the skins and barreled to finish fermenting on oak. The wine was then racked off its lees and left to mature for eleven months in one year old French Hogsheads, before being lightly fined and bottled.

Durif in April

Our feature wine for the month of April is our newly released 2004 Durif.

Deep purple to black with raspberry edges and a dense black red core it has a lifted sweet lavender floral nose with cherries & raspberries with a subtle leafy complexity. This is a full bodied wine with excellent raspberry, cherry and funky clove spice characters balanced by a warm mouth-feel & long finish.

Served best at 13-15ºC. Whilst fantastic right now the wine will reward cellaring for a further 5-8 years.

T-XIV SPARKLING SHIRAZ

To maintain the unique qualities of our Sparkling Shiraz we have chosen to create a more complex and complete wine by blending small amounts of older vintages in the base wine. This decision was made to ensure our Sparkling Shiraz remains one of Australia's premium sparkling red wines, enabling us to choose the best quality base wines from selected vintages, rather than being restricted to the quality of a single vintage.

The recently released T-XIV features a palate of intense up front sweet red fruits (blackberries, raspberries & boysenberries) counter pointed by drying tannins and an elegant mousse.

January Feature Wine

Our feature wine for the month of January is the 2005 Chenin Blanc.

Delicious aromas of sweet apples, pears, cantaloupes and a hint of carnations match a palate that displays pear, stewed apple, tropical fruit salad and lychee characters. The 2005 Chenin Blanc is ripe and sweet with a balanced acidity.

The grapes for this wine were picked in the cooler pre-dawn hours to help retain the stunning aromatics and refreshing acidity that Chenin Blanc is famous for.

Serve this wine with leafy Thai inspired seafood and green leaf salad. Enjoy!
